Who doesn’t love muffins with blueberries and a streusel topping?! I can not even count how many times during this pregnancy I have made a batch of these delectable muffins. I even dream of them in my sleep sometimes. These muffins remind me of a fancy gourmet blueberry muffin from the bakery and is definitely a top recipe in my book. Funny, but true story… While unloading my groceries from the grocery store one day I realized an odd abundance of items that I brought home. This consisted of red grapes, organic raisins and raisin bran cereal. I had been buying these few items quite often since finding out I was pregnant, but it wasn’t until I bought all three at once that it dawned on me. This was a result of withdraws, I was desperately missing my evening glass of wine (Prescribed by me 😉 ). I was searching for my wine from any source of grape I could get my hands on, in that instance I started laughing at myself. My subconscious cracks me up, not realizing I had been doing this for two weeks already. That obsession slowly went away and I am currently hooked on my morning (sometimes late night snack) fresh fruit and yogurt parfaits….
I grew up with two extremely opposite parents when it came to eating habits. My mom never liked us eating sugar or fast food, my dad on the other hand would sneak my brother and I to Mc Donald’s every morning if we asked. I remember each year on my birthday as a very young child feeling overwhelmed with joy when my mom took me to the grocery store and let me pick out any cereal I wanted. This was the only time I was allowed to buy the sugary stuff and usually picked out the Barbie cereal with little marshmallows in it. In these moments when I was indulging in sugary cereal it felt so exciting and special. As an adult I am extremely grateful to have experienced both options, eating healthy and indulging in the bad stuff. I have made my own personal choice not to eat the “crap” foods and do not feel that I’m missing out one bit….
Our mother’s mean the world to us and there is not a more perfect way to show that love then by making a special breakfast for them. French toast has many different versions, but my all time favorite is classic and simple with fresh whipped butter dolloped on top that melts as it sits. Then pouring over gently and slowly a good quality of real maple syrup. Sprinkle with a light dusting of powder sugar for extra sweetness….
