Mini Eggs with Cheddar and Green Chilies

  • 4 tablespoons of butter
  • 5 large eggs
  • 1 cup of cottage cheese
  • ½ cup of cheddar cheese plus more for topping
  • 3 ounces of a 4ounce can of diced green chilies
  • ¼ cup of flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • pinch of pepper
  • 2 mini muffin pans
  1. Preheat oven to 350F
  2. Melt butter and grease 2 mini muffin pans brushing with butter generously (about 2 tablespoons) and set aside
  3. In a medium bowl whisk together eggs, cottage cheese, cheddar cheese, chiles, flour, baking powder, salt, pepper and remaining 2 tablespoons of butter
  4. Spoon in egg mixture just over half way into greased mini pan
  5. bake for about 12 minutes
  6. Makes About 48 mini eggs
