Coodles and Roasted Tomatoes with Lemon Dill Dressing

  • 3 large seedless Cucumbers
  • 1 16 ounce container grape tomatoes, halved
  • 3 cloves of garlic, minced
  • Trader Joe's Crumble Feta with Mediterranean herbs or feta of choice
  • Olive oil
  • 3 tablespoons fresh squeezed lemon juice
  • Fresh or dried dill
  • Salt and pepper
  1. Preheat oven to 400F
  2. Place halved grape tomatoes on baking sheet and toss with 1 tablespoon olive oil, garlic, salt and pepper
  3. Roast for 16 minutes
  4. Using your spiralizer make your Coodles
  5. Lemon Dill Dressing: mix 3 tablespoons of olive oil with 3 tablespoons of lemon juice and desired amount of salt, pepper, fresh or dried dill
  6. Plate your coodles, adding desired amount of mediterranean feta, then top with roasted garlic tomatoes and last but not least drizzle with Lemon Dill Dressing
