If you were ever wondering the difference between chick peas and garbanzo beans I have the answer for you, nothing! Why must life always try and confuse us when things do not need to be complicated? I love this recipe, it’s not intricate. That is until I was at the checkout counter recently and said “I forgot my chickpeas, I will be right back.” Upon returning to the check out lane with a can of garbanzo beans the cashier looked at me very puzzled. She then asked “you wanted garbanzo beans or chick peas?” Well at that very instant my brain assumed they were the same thing but for a moment I second guessed myself, immediately I pulled out my phone from my purse and google searched for the answer. After finding the answer to this puzzling mystery I felt relieved about not looking like a complete idiot. Oh, and yes there is no difference. This is just another unnecessary way we continue to be confused in this world.
If you’re not offering vegetables to your kids they are not going to magically request them one day out of the blue. It is our job as parents to introduce them in a fun and healthy way. So, next time the kids are coming home from school put out this platter of Simple Hummus With Veggies and I bet you’ll see them fall in love with vegetables like never before. My favorite pita chip to eat with this dip is from Trader Joe’s. Surprisingly they are the reduced guilt pita chip and the reason behind why I like them better might surprise you. They have a light airy texture verses regular pita chips that are very dense. No matter what you choose to dip into this delicious and simple humus you will be pleased and never want to buy prepacked hummus again. Five minutes, a mini food prep and done!
- Assorted veggies and pita chips
- 1 15 Ounce can of chick peas/garbanzo beans
- ½ The juice of 1 lemon
- 1.5 Tablespoons of olive oil
- 1 Garlic clove
- Salt and pepper
- Prep all veggies and place on platter
- Rinse Bean under cold water
- Place beans into food processor then add olive oil, lemon juice, garlic, salt and pepper
- Cover and blend a couple minutes until smooth desired consistency
- Adjust seasoning if needed
- Serve immediately or refrigerate
