Is there anyone who hasn’t grown up on meatloaf with a side of mashed potatoes? I really wanted to elevate my taste buds in this traditional dish and find the best flavor combinations. This meat loaf is flavored with tomatoes, garlic, fresh thyme and topped with a lovely mushroom gravy. Taking this simple everyday meal and making your mouth water for more was my mission. Mission complete!
Surprisingly I have a toddler who loves mushrooms and asks for more “shrooms” please! In the most adorable little voice that would usually make anyone cave even when asking for cookies. Well I’ve learned to say no to that adorable voice when needed and now we are at the fun age where I get the saddest face possible followed by that one question that never ends, “but why?” I have yet to pull out the classic ” because I said so” but inevitably it’s coming. For now I’m just pleased with his love for vegetables as much as his love for cookies.

- 1 pound ground turkey
- 1 egg beaten
- ½ cup can of diced tomatoes
- ⅓ cup finely chopped yellow onion
- ½ cup bread crumbs
- ½ teaspoon garlic powder
- 2 garlic cloves minced
- ½ teaspoon fresh chopped thyme
- salt and pepper
- Pre heat oven to 350F
- In large bowl add ground turkey, egg, tomatoes, chopped onion, bread crumbs, garlic powder, minced garlic, thyme and salt and pepper to taste
- Mix with hands and form meatloaf placing in loaf pan
- Cook for 50-60 minutes
